I'm going to make this beer either this weekend or early next week. Thanks for posting the recipe and answering everyone's questions, Bug.

I just want to clarify one thing about the batch size, since I occasionally mess that up. Is the 5.5 gallon batch size what is meant to be transferred to the fermenter? I know Jamil puts 6 down so 5 gallons get transferred to the fermenter, but I just need some clarification with that. Thanks in advance.

Just to clarify ..... it's 6 gallon batch so that 5.5 gets transferred to fermenter and 5 gets transferred to keg :)

That's pretty much how I figure it. I start with 7.0 gallons preboil with about 1.5 gallon boil off. That gets about 5.5 in the fermenter and 5 to the keg.

I put your recipe together and ordered the ingredients from Ed at BMW. foolishly I forgot to separate the oats so i can toast them.

What are my options, add another pound of oats and toast them or is there another workaround. I can run by my LHBS if necessary. Thanks in advance

I would probably just pick up another pound of quick oats at the grocery store, toast them and add it to the rest of the ingredients in the mash. You will get a little extra mouthfeel and will probably need an extra handful or two of rice hulls to keep the sparge from getting stuck.

A bit of hint on using the toasted oats: After roasting, dump them into an empty paper grocery bag and let them sit for 3-4 days to out gas. This will eliminate a bit of harshness that will show up if you use them immediately. I don't know exactly what is going on chemically in this, but it works.

Just read through this thread and I can't wait to give this beer a go. I'm surprised though that there hasn't been any discussion as to what kind of bourbon people have used...I'd imagine the type and quality of bourbon could have quite an impact on the nose and taste. So what are people using? Old Crow? Beam? Makers? Pappy Van Winkle 15 Year?

Last year Jimbob and I used Knob Creek and it was wonderful. This year we're changing it up and using Redbreast Irish whiskey.
