Hello From Austin TX

Been Listening to the podcasts since April of this year and finally decided to join in on the fun in the forum. Just bottled my 4th batch yesterday. It's a Belgian Abbey 12, but we call it "Ceiling Beer". It was my first attempt at a mini mash and I used a 2000 ml yeast starter. The fermentation was so strong that it blew the air lock off the carboy and shot beer on the ceiling of my apartment. Still haven't found the bell from the airlock yet. A little open air fermentation will only make a Belgian better, no? Anyway, just wanted to say hi to the BN Army and thanks in advance for answering my many noob questions to come.

Welcome fellow Texan! Let us know how the ceiling ale comes out. A buddy of mine had the same thing happen with a strawberry melomel and it ended up just fine...

Glad to hear that my ceiling ale still has a chance to come out ok. Nice to see so many Texans in the BN. I'm definitely going start using blow off tubes for most of my primary fermentors. Especially on higher gravity beers. I'll definitely let you know how it turns out.
