Hi Nerds

What is your faworite acid for lowering the mash Ph ?

I have a water profile that is a pain in my ass. with bicarbonates at 347 ppm,
and
Ca/97: Mg/18: Na/23:.SO4/30: Cl 38

A waterprofile that is grat for stouts, but i really like to brew other beers to, yes I can add some Gypsum and have a great IPA water.

So right now i'm working to lowering my mash Ph with citric-acid, but I'm not happy with the results.

Hey Kasper,

There are a couple water shows available in the Archives, starring Dr. Evil. They touch on this topic pretty well.

You could try a mix of Phosphoric and Citric. If you use a mix of acids you won't get as big of a flavor contribution as you would from one alone. You could also try diluting with RO or distilled water and then building back up from there with salts.

You can use 80% Lactic Acid too.

I like Five Star's 5.2 Stablizer because it is idiot proof. Even for me.

I was getting an odd flavor from what I believe to be the 5.2 when using it at the directed dose. I've since reduced it more than half with favorable results.

I'm going to listen to the archive and look at other methods like RO dilutions and adding back.

Anybody going the Reinheitsgebot route of using acid malt ?

Hi Speyedr

I've listend to the water shows, but wanted to hear your favorite way.
Right now RO and destilled water in not an option for my, but I'm looking in to bying a small RO thing, that people use for water for fish tanks. And then dilluting or building form the ground up.

I have some acid malt, but I don't really know how much I should use to lower the Ph just enough.

One of these days I'm going to make my self a T-shirt saying "F"#¤ the Reinheitsgebot"

I think that one should use what ever to make the beer taste just like you want.
