I hear ya. If I build one it might only be ready ready in 2-3 years, that's how busy I will be. Golf course, Chef's school and raising a little boy. Yes, it's a lot of $$$ but we have one life to live and I never know where this will bring me too. Looking at opening up a brewpub in 3 years. That's why the chef's school. And if I can get better at brewing and getting recipes that I can do over and over again that are the same, I will have a better grasp on the overall process at the pub. Won't really be able to afford to pay a brewer at first. Anyway, thinking ahead here.
But I do understand your point of view.
