In my best saisons, I've used 1 kg of malted rye and wheat, in addition to pils malt. Saaz is a good hop for saisons, I think.

Ferment at high temperaturs. I start at 18-19 and quickly ramp up to 28-30 over four-five days. Very important if you are using wlp565.
