Wife and kids are leaving town next weekend and I want to brew.
I plan on making an English Brown Porter and something else I have to think of. I'm going to use JZ's recipe in the BCS book (page 154-155).
9.5lbs British pale ale malt
1.0lb Brown malt 70L
1.0lb Crystal 40 malt 40L
10.0 oz Chocolate malt 350L
Going to Northern Brewer, I was thinking of Maris Otter base malt, English Brown malt, Breiss C40, and English chocolate malt. English everything but Breiss crystal instead of the described (English medium crystal) on the website. Would the "English Medium Crystal" malt be similar in concept enough for Crystal 40? Says the range is 50-60L, but the recipe says for 40L. I'd be a bit darker and more caramel flavor with the darker grain, correct? If you were in my shoes, which would you pick, the English Medium Crystal or the Breiss crystal 40?
NB doesn't have UK Fuggles hops, so I'm going to call my local brewpub and see if they have UK Fuggles I can buy from them. I know they use Fuggles in their beers, but I don't know if it's US or UK.
