Greetings from Orlando!!!!

Hello. My real name is Joseph Wilson. I'm 21 years old and am currently studying accounting at UCF in Orlando.

I started my booze making adventures with mead after a friend refered me to http://www.gotmead.com. Alot of those people are into brewing so they kind of inspired me to make beer. Ive been at it for about two years now. I have been on several other forums and have read a few books.

I've made about 40 gallons each of beer and mead now. I've got about 30 gallons of mead aging so my last several batches have been beer. I started with all extract, then went to partial mash, have recently went over to all-grain. I do single infusion mashes in a 60qt cooler. I do double and triple batch sparges depending on how much wort im trying to collect and what gravity im trying to get to. I boil in a AB keg with the top cut off on a 150k btu propane burner.(usually i run it at like 1/3 power).

I havent entered any contests yet, but might do so pretty soon.

I got a keg system goin about a year ago but never really set it up. I finally set it up today, and will be getting some co2 to complete the project tomorrow. Right now i've got an orange blossom cream ale, and what i named Lumberjack Export Ale waiting to be tapped and drank.

I drink pretty much everything, guinness and newcastle are my favorite commercial beers. So far the extract hazelnut brown that I brewed was my favorite.

My other hobbies are shooting, lifting weights, and maintaining my fish tanks.

I appreciate the heads up. I think i'll only have one brew ready for SAAZ and i'll be in the "rocket fuel"(braggot) category. Ill try to have a few ready for the other one though.
