Neuron, Welcome to the Forum!

When I started brewing 15 years ago I brewed hot beers for a whole summer and finally asked the LHBS if all homebrew gives you a headache, they educated me on Fusil oils produced in hot fermentation and my consumption of Advil dropped immediately.

This is a great group, ask lots of questions, and you will be brewing award winning beer in no time.

I grew up near Minneapolis, but my Grandfather was mayor of Stewartville for 12+ years. Remember the area fondly. Donchyaknow.

Still can't get rid of the way I pronounce "O"s but it's my badge of Minnesotaness.

Don't knock your IPA until you try it! Then don't throw it away--hold on to that bad boy for a while longer if you can spare the space and try it later--it might get better!

I miss green Jello Ambrosia...

I'm going to rack that IPA tonight to a secondary and let her sit for a couple weeks and see what happens. No point in dumping it now.

Green Jello ambrosia is good, but I had the most made-up minnesotan dish ever a couple months ago. It was a spaghetti casserole with sweet corn added in. It was awesome.

Thanks for the translation to non-MN people that a hot dish or a dish is a casserole...

I have to admit that I didn't know what hot-dish was either for a long time. I grew up in Iowa. No hot-dishes there either.
