Another new listener from MN.

Just found the BN a couple weeks ago. Spent too much time over the last two weeks trying to get caught up. Great show, entertaining and greatly helpful information.
Just some info about me. Had my first Mead at the MN Renaissance Festival about 5 yrs ago, spent a couple years trying to find mead. Coulnd't find any so I started reading and started making my own approx 2 1/2 yrs ago.
Over 1 yr ago I started extract brewing. Not being a big beer drinker, I mainly brew for my brother and friends. I just enjoy the process. However, over the past year I have been trying many different commercial beers in search of what I might actually enjoy. I have found my beer niche, Lambics and some of the other Belgian beers.
I now have two extract lambic style beers at 8 months old. Now i'm caught in the debate of going all-grain or not for the Lambic-style production.
For me mead making and homebrewing is the perfect balance of art, science, and nature.

Welcome to the madness! I just sampled my first homebrew lambic last night. I started it just last April with the bugs added in June. Tastes great at present but needs a few more months for the brett to further develop. It started live as a belgian apricot wheat but I didn't really like the taste. As a lambic it is going to be really nice.

Keep coming back and don't let Bub or Mrs. H scare you off. :)

Welcome Chris!

I may be wrong about this, but I know that when you make all grain Lambic you're shooting for a dextrinous wort, right? I think that Extract brewing is dextrinous by nature right? You CAN make a dextrinous wort by all grain, but you can make a nice wort by extract, and that can give your bugs everything they need.

You may want to do AG for authenticity sake, and try a turbid mash once (and ONLY once from what I hear), but if the extract works well for this style why mess with a good thing? Make a nice wort using light DME and Wheat DME and you're good to go..
